Pumpkin Shortage???

Have you heard about this? A pumpkin shortage. Something about a bad crop last year. True or not, I panicked at the thought and snatched up every can of canned pumpkin I saw for a good 3 weeks.. I think I'm set for the winter, so let the pumpkin recipes begin. The idea came from here Black Bean Pumpkin Soup.

I decided to puree the entire soup, mostly to make my picky eaters happy. And notice, just canned pumpkin for me. I also halfed the recipe and it fed 4 of us along with these....

Pumpkin & Black Bean Soup
1 Can Black Beans
3/4 Cup canned pumpkin
2 cups Beef Broth
1/2 onion
2 1/2 tsp cumin
1/2 cup diced ham
1/2 cup tomato sauce

Saute onions in pan until soft. Add cumin and saute until fragrant. Combine all ingredients except broth in a food processor, puree until desired consistency, mine still had texture but individual ingredients undetectable! Add puree to warmed beef broth. I didn't even add extra salt between the broth and the ham. So salt to taste!
